Answer your cravings, They'll love you for it.

Lamingtons were made after Mandee wrote about her lamington cupcakes. I did the same thin as her except for I doubled the recipe and baked into a square tin. I'd been craving this treat for about 5 months and I was oh-so satisfied. Also feeding this uh, "national" cake to the two people I live with who come from Europe was pretty nice too, such a simple treat to be so impressive!

Since I made lamingtons recently (for the first time since going vegan) I am now inspired to make them ALL THE TIME.

it was so delightful for me to see my swedish and brittish housemates go nuts over these deceivingly simple cakes. the swede is convinced i am a master cake maker after having tried these as her first ever lamingtons and some banana bread last night that she also had never heard of before.

that whippable stuff at rishons is creppy - it has all kinds a gross crap in it! but if you do find some soyatoo in syd, yes please! not the can stuff though, we ate ruth's one at cale's picnic and it's a bit airy fairy. i want the stuff in the carton!
